[Baking Adventure] Beer Cheese Bread

I've been making beer cheese bread for a few years now, mostly for special occasions, because it is a bit of work.  It is very cheesy and sweet, so in high demand by those who've had it.  I've always used a tweaked yeast recipe (seen below) that I picked up somewhere, but it produces a pretty dense bread.  I haven't perfected working with yeast, so it doesn't rise sometimes making an even denser bread.  Note: It is still quite good that way.  This weekend I made some when a friend from out of town demanded some upon her visit.
 

Extra-Sharp Cheddar
Mix 1
Mix 2

Uncooked Loaves
 Beer Cheese Bread 
8 Tbsp Sugar
2 Tbsp Yeast
1 Cup Warm Beer
4 Cups Flour
2 Cups Grated Extra-Sharp Cheese
0.67 Cup Non-Fat Dry Milk
1.5 Tsp Ground Mustard
2 Eggs

Make Mix 1: Sugar, Yeast, Beer -> Let stand 5 minutes

Make Mix 2: 3 Cups Flour, 1.5 Cups Cheese, Dry Milk, Mustard, Eggs
Add Mix 1 and 2
Knead until it is dough (~ 5 minutes)
Add the rest of the four as needed to un-stick the dough.
Divide dough into 4 loaves with 1/8 inch deep X cuts into the tops.
Let raise 1.5 hours.
Bake 20 minutes at 375
With 5 minutes left, add cheese to top.
Cool on wire rack.
